研究發現人造肉等“超加工食品”將增加心臟相關死亡率

巴西聖保羅大學與倫敦帝國學院近日公佈一項研究結果,評估11.8萬個40至60歲英國人的飲食習慣,結果發現以植物為主的飲食習慣確實可以提升健康,膳食中蔬菜含量每增加10% ,可降低患心臟病機率20%,但這個結果只限於新鮮蔬果,如果是來自像Beyond Meat的“超加工食品”,反而會增加心臟相關死亡率達12%。主要研究員Fernanda Rauber解釋為何超加工食品會導致血壓和膽固醇升高時指出:這些食品中的添加劑和工業污染物,可能會加劇體內氧化和炎症,選擇植物性食品時,也應考慮加工的程度。另一名共同研究員Eszter Vamos博士則指出,透過誤導性營銷,令公眾認為植物性食品一定健康。而英國飲食協會營養師Duane Mellor説得更坦白,指不含動物成分的食品如餅乾、薯片、糖果和汽水,技術上來説是植物性,但多數人從不曾認為這些是健康飲食一部分 。
